I need some ideas on what to eat on my vegan Atkins diet besides nuts, tofu and veggies?

I don't know what you've determined your daily carb allowance to be, but melon is relatively low in carbs, as are some whole grains. Because they are slow to digest, whole grains don't cause an insulin spike like processed grain, so some should be allowable. Quinoa would probably be a good choice-it is the highest protein grain.
