Why are some victims of racism so vehemently hateful towards s?

Because people are hypocrites. Also, most victims of racism are not phobic. I tend to believe that is a small minority of a minority... I agree that the Hispanic and Black communities are full of s, especially older men, but the younger generation is much more accepting of all people because we have grown up with it and it's not as taboo anymore. Many of those s you talk about are probably in fact, religious. Following the Good Book doesn't justify being racist, but unfortunately Christianity has a history of condemning uals as hell bound heathens.
